Butter Shortbreads

- 250 g butter
- 1⁄2 cup icing sugar
- 1 1⁄2 cups flour
- 2 teaspoons lemons, rind of, grated
directions
- Have butter at room temperature. Combine butter, sifted icing sugar, sifted flour and lemon juice, with and electric beater; beat on low speed to combine all the ingredients, increase speed to medium and beat for 10 minutes.
- Spoon the mixture into a large piping bag fitted with a star shaped tube. Pipe small stars on lightly greased oven trays.
- Cook in a moderate oven for 10 - 15 minutes or until golden.
- Stand on tray for a few minutes.
- Cool on a wire rack.
