Ingredients Nutrition

  • 2 onions (roughly chopped)
  • low-fat cooking spray
  • 4 sprigs thyme
  • 2 (400 g) butter beans (tinned, drained and rinsed)
  • 750 ml vegetable stock
  • 4 slices bacon (or veggie bacon)
  • chives

Directions

  1. Cook the onions in low fat cooking spray until soft for about 10 minutes,
  2. Add the leaves from the thyme sprigs and the butterbeans plus the chicken stock, simmer for 10 minutes season either leave chunky or liquidise. serve with bacon or veggie bacon atop with a sprinkling of chives.
