Buttermilk Baked Chicken

  • Preheat oven to 400°. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
  • In a large bowl, stir together buttermilk, hot-pepper sauce, ¾ teaspoon salt, and ½ teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.
  • Place the chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet.
  • Bake until chicken is golden brown, about 35 minutes.
  • Leave enough space between the chicken pieces so that they crisp evenly all the way around.

  1. I had p;anko crumbs so used instead of bread. This was a very good recipe. I made my own buttermilk also using vinegar and milk. I used thighs, wings and drumsticks. This was delicious and tasted fried. thanks for posting!
     
  2. This was incredible! I, too, only made it for 2 servings (chicken breasts). It was an excellent Saturday night dinner. I served this with corn, pasta and apple/blueberry crisp for dessert. I'll be making this again. Thanks so much!
     
  3. This was great! Made it out of the new cookbook. I cut it down to 2 servings, used only drumsticks, and added a bit more hot sauce. Also, I didn't use the salt. Thanks for posting this!

I'm a mother of two great kids, Kitty & Matthew. and trying to catch up for the lost time that I didn't make cookies and cakes for the kids ( or even a decent meal for my husband of 15 years Doug) while I in school studying to be a Nurse Practitioner. My 2008 New Years Resolution is to make dinner at least 3 times a week (no more yuckky take out..Be gone McDonalds!) .
