Buttermilk Bars

  • Cream 1/2 cup butter, 1 cup brown sugar and 1 tsp vanilla.
  • Add egg, beat well.
  • Sift flour and baking soda together and add alternately with buttermilk to egg mixture.
  • Add nuts.
  • Bake 20-25 minutes at 350 in a 9x13 pan.
  • For the topping: Bring topping ingredients to a boil (1/4 cup butter, 1/4 cup sugar, 1/4 cup brown sugar, 1/8 cup milk and 1/2 tsp vanilla). Boil 2 minutes. Add 1 cup powdered sugar and mix well.
  • Spread on cooled bars.

  1. These were delicious and super moist, but the topping was a little bit tricky and I wished I'd gotten more of a heads up on what to expect with it. All was fine until the last step of adding powdered sugar - when I did so, the mixture immediately clumped up and began to crumble and dry out. It was a crumbly mess. I fixed it by adding about a tablespoon of melted butter and a small amount of water and putting it back on the heat, while whisking. It eventually came back together and to a smooth consistency. When I poured it onto the bars, it hardened up pretty rapidly and I was not able to get as even of a spread as I wanted. Still, delicious.
