Buttermilk Biscuits

ingredients
- 2 cups self-rising flour
- 1⁄4 cup shortening
- 1⁄4 teaspoon baking soda
- 3⁄4 cup buttermilk
directions
- Set aside 1/4 cup of the flour.
- Cut shortening into remaining flour.
- Add soda to buttermilk, and stir into flour mixture.
- Use the 1/4 cup flour you set aside to flour board or counter and knead the dough.
- When the dough is easier to work with, roll it out to about 1/2 inch thick. (Don't knead long at all, it will make the biscuits tough.).
- Cut with floured round cutter. Bake at 400 degrees F until brown - about 10-12 minutes.
- NOTE: I have made these ahead and refrigerated or frozen them.

I'm a stay-at-home mom, school volunteer, church volunteer, etc., and I live in Middle Tennessee. My passions are raising children with good moral character, being a good Christian, and food! My pet peeves are recipe instructions that leave out what to do with one of the ingredients, and people who won't put their shopping carts in the cart corrals! I have twin daughters who are in their second year of college and a son who is 16. My girls' college is close enough that I can come by every couple of weeks or so. When I tell them I'm coming, they ask Are you bearing baked goods?. Usually, I am, to the excitement of their suitemates!
