  1. Beat eggs until thick and lemon colored - about 10 minutes (if you use a stand mixer, less time).
  2. Sift dry ingredients together.
  3. Add buttermilk and mix with eggs, beating until mixed.
  4. Add dry ingredients and mix until blended.
  5. If thicker or thinner cakes are desired, add or subtract the amount flour.
  6. Fry in hot oil.
