Buttermilk Squirrel Pie

"Here's a nice way to cook old squirrels which are too tough for frying."

  • Preheat oven to 375 degrees.
  • Wash squirrels well inside and out with warm water.
  • Cut into serving pieces.
  • Put squirrel into a kettle, add water to cover 2 inches and add salt, heat to boiling.
  • Reduce heat, cover tightly and simmer until very tender, 1-2 hours+ depending on age.
  • The meat should be almost ready to fall off the bones.
  • Remove squirrel and let drain.
  • When cooled cut meat from bones.
  • Mix together vegetables, soup and squirrel meat in a casserole dish.
  • Mix buttermilk, margine and flour together and pour over top.
  • Bake at 375 degrees for 40-45 minutes.

  2. I didn't have squirrel on hand so I used chicken per another reviewers suggestion. (used to love the fried squirrel my grandma used to make)I thought this dish was just terrific. I hope to have squirrel next time and invite Lalaloob over for this dish with some chitlins' and pickled pork feet. OMG.

  4. Not everything one cooks need to be something one could eat in a Highbrow French restaurant;simple foods have their place. Even living in KY, I had never tried Squirrel. Now I think I might; it sounds good Chuck. Lalaboob, learn some courtesy
     
  5. Someone thought enough of this recipe to post it and it would be equally good with chicken or rabbit. Of course those who disagree just give it a bad rating for whatever stupid reason. Now I might have to make this just because!

I’m over the hill and heading down the back side at a rapid rate it seems, single, and retired now. My loves? Good friends, most of all. After that I guess it would be wildlife and photographing it. In fact, I love anything that deals with wild animals and the outdoors. Then comes playing with my dog and making a mess trying to cook in the kitchen or around the fire pit, grill or smoker while enjoying a good tumbler of whiskey (whisky).
