Buttermilk Waffles

"This recipe is from the Outsmart Diabetes Cookbook. They have it as a pancake recipe, but I prefer waffles. They're light and have a pleasant flavor. They're my family's favorite waffles."

  • In a large bowl, combine the flour, sugar, baking soda, baking powder, and salt.
  • In a medium bowl, whisk the egg and egg white until very foamy.
  • Whisk in the buttermilk, vanilla extract, and oil.
  • Stir into the flour mixture just until combined.
  • Add water until desired consistency.
  • Heat waffle iron, spray with nonstick cooking spray.
  • Prepare waffles according to manufacturer's directions.
  • Serve with sugar-free syrup.

  1. Great recipe! It was nice to find a recipe that didn't use a stick of butter ;) I didn't have ww pastry flour, so used 1 cup white, 1 cup ww and 1tsp. corn starch. Made the outside nice and crispy. I also beat the egg white seperately and folded them in. This was the first recipe that's made good waffles in my waffle maker. I'm glad it's on the healthier side
     
  2. Wow wow wow! These were awesome I agree how so long without alot of reviews??? im soo glad I tried them. My 5&3 yr olds were loving them also. I didnt have the right flower (used organic unbleached white) and also was out of reg vanilla so I used 2 tsp. French vanilla.. I am getting the ccrrect flower for the next time. Oh and these are so moist you will almost think there not cooked didnt even need syrup they were sooo good..

  4. These waffles were great! I forgot to grease my waffle maker the first batch and had one big mess. But I got past it and ended up with some wonderful waffles. I didn't get 13 from this recipe though, I only got 10 (including the 2 duds), so I guess it depends on how much water you end up adding to get your desired consistency? I also had a problem with some of the tops not cooking, but I am sure that it is more the waffle maker rather than the recipe itself. Anyway, thanks for a great one!
     
  5. These pancakes were some of , no these were the best health wise cakes I ever tasted. They were also a snap to make. The batter was thick but the pancakes were not.
