  1. Line a cookie sheet with waxed paper.
  2. Combine the sugar, butter and evaporated milk in a saucepan.
  3. Bring to a boil and boil for 1 minute, stirring constantly.
  4. Remove from the heat and the butterscotch chips.
  5. Stir until smooth.
  6. Stir in the rolled oats and coconut.
  7. Mix thoroughly.
  8. Cool for 5 to 10 minutes.
  9. Drop by rounded teaspoonfuls onto the waxed paper.
  10. Refrigerate until firm, about 1 hour.
