Butterscotch White Chocolate Coconut Muesli Clusters

"This recipe is a take on my Recipe #459346 using white chocolate and more butterscotch chips as well as muesli in place of granola. In addition I added some coconut to the mix. I thought the clusters came out super yummy, so Im posting this here. I hope youll enjoy it, too. :) The muesli I used included some nice red goji berries, so these looked quite festive. Feel free to experiment with different mueslis."

  • 12 cup white chocolate chips (I used pieces of a white choc bar)
  • 14 cup butterscotch chips
  • 34 cup muesli (use your favourite, mine included different flakes, amaranth, poppy seeds and goji berries)
  • 14 cup desiccated coconut (unsweetened)

  • In a microwave safe bowl combine white chocolate chips and butterscotch chips. Melt them and stir until smooth (in my microwave it took 1 1/2 minutes on high). You can also do this over a warm water bath.
  • Stir in muesli and coconut until everything is well coated. If you find that the mixture is too wet, simply add some more muesli by the tbs until it reaches a nice thick consistency.
  • Drop by tabelspoonfuls onto a paper-lined baking sheet. Allow to dry for about 1 1/2 hours or until set (this might depend on the weather).
  • Enjoy.
