  • Set oven to 350 degrees.
  • Grease a 13" x 9" baking pan.
  • In a medium bowl, combine the flour, 1-1/2 cups granulated sugar, baking powder and salt; cut in the shortening with a pastry blender or in a food processor, until the mixture resembles coarse meal.
  • Mix in 3 of the eggs, and the melted butter; mix with a wooden spoon to combine well.
  • Spread this batter over the bottom of the prepared baking pan.
  • In another bowl, combine the softened cream cheese, the 2 remaining eggs the confectioners sugar (reserving 2 Tbsp for the topping of the cake) and the vanilla; pour this mixture over the batter in the baking pan.
  • Bake for 15 minutes; remove from oven, and sprinkle the reserved 2 Tbsp sugar over the top.
  • Return the cake to the oven, and bake for 35 minutes more.
  • When done, the cake will still be moist in the center.
  • Cool slightly before serving.
