Cabbage and Ground Beef Soup or Stew

"Don't remember where I got this recipe. My husband calls it stew; I call it soup. A hearty concoction on a cold day. Also better the second day and good for a slow cooker."

  • 1 lb ground beef (I use extra lean)
  • 12 head cabbage, cut into bite size pieces (more or less depending on size of cabbage)
  • 2 cups vegetable juice (like V-8)
  • 14 teaspoon pepper
  • 1 tablespoon dried parsley
  • 4 beef bouillon cubes
  • 14 cup soy sauce
  • 4 cups water
  • 14 12 ounces canned tomatoes (diced, I have used tomatoes with green chiles.)
  • 10 34 ounces onion soup (condensed and blended to liquid)
  • 2 teaspoons garlic, minced
  • 14 12 ounces carrots, canned (or equivalent fresh)
  • 14 cup frozen peas
  • 2 potatoes, cut into bite size pieces

  • Cook ground beef. Add all the ingredients and simmer until cabbage is tender. If you like to give it more of a brown color, add a little Kitchen Boquet.
