Cabbage and Rice Casserole

"I like the zip that the brown sugar twin and mustard gives to this recipe. One generous serving is only 3 points using ground turkey; 4 1/2 points if using ground beef. Prep time includes frying up the meat."

  • Brown meat.
  • Layer cabbage on bottom of a square 9x9 baking dish.
  • Layer onion, meat and rice on top of cabbage.
  • Mix sugar, lemon pepper and mustard to undrained tomatoes.
  • Pour over layered ingredients.
  • Cover and bake 1 1/2 hours at 350 degrees.
  • Uncover and bake an additional 10 minutes.
  • Double for a 9x13 pan.

  1. I set out to double this recipe. My 1/2 cabbage (medium size head) came to almost 8 cups chopped. I had a large covered baking dish and I knew the cabbage would cook down, so I used it all. It was a perfect amount of cabbage. Other changes: Did not double the tomatoes. I used one 28 oz. can of crushed tomatoes with 4 T. of brown sugar, 4 t. of spicy brown mustard, 1 t. of basil, 1 t. of Italian seasoning, 6 cloves of chopped garlic, 1/2 t. lemon pepper, and 4 oz. water mixed in. I used one cup of basmati rice. Baked it covered for 1-1/2 hours and I could see it did not need more baking. Ten minutes uncovered would have dried it out. I think next time I will add 1 T. of lemon juice to the tomatoes and just use regular pepper. We all enjoyed it and ate large portions. I was pleased with how easily this came together. Thank you for the good recipe.
     
  2. I had some problems. The rice didn't cook until I added more tomatoes. I have tried the regular version and the regular brown sugar and mustard combo was much more tasty to us. It was way to dry with the diced tomatoes and the garlic, basil and oregano just didn't taste as good as the plain old diced or stewed [unsweetened] tomatoes. I added more stewed tomatoes and the rice cooked just fine. This was interesting but I think I will stick with the regular version.
     
  3. This was very good. It was a little dry and next time I may add some tomato juice to the recipe.

<p>I live in Northern Indiana with my husband of 37 years and best friend, Evan. Due to unfortunate circumstances and God's grace, we are raising our two beautiful grandchildren from our daughter, Chris, who lost her battle with breast cancer after a hard, four year battle. It is a responsibility that I do not take lightly. God has blessed us with these kids and it is an honor to be able to raise them. That's not to say, it's easy. Organization is the key. We do lots of meal planning and advance preparation. <br /><br />Evan &amp; I enjoy eating out at fine restaurants and then trying to re-create gourmet meals at home. Unfortunately (?) we are such good cooks that we are usually disappointed when eating out because we know that what we prepare tastes better (and less expensive). Therefore, we usually only order something that we haven't made at home. <br /><br />We love to cook together and spend many hours cooking for family and friends. Quite honestly, Evan is the better cook in the family. He has a knack for knowing what flavors and spices blend well together and has created many original creations. <br /><br />I love to find and try out new recipes - which is why I visit Recipezaar often. We've added many of your shared recipes to my public cookbook titled Permanent Edition. I only post recipes that are our favorites and feel that others will enjoy them. I look for ease of preparation AND outstanding flavor. If I post a recipe that's a little more work, it's because the end result deserves the extra effort. <br /><br />If we had a month off with no work, no responsibilities, and no financial issues; we'd spent time on the ocean in Oregon.
