Cabbage Avocado Tacos

  • Shred the cabbage into thin slices. Mash the avocados and add the seasoning salt, garlic salt, and lime juice. Add avocado mixture to the cabbage and mix until cabbage is covered completely. Refrigerate for two hours.
  • Cover bottom of small skillet with oil and heat on medium-high. Once oil is hot, place a corn tortilla and as it starts to bubble, flip over. After the second side bubbles, fold in half into the shape of a taco. If oil is hot enough, it will only take 30-45 seconds for each side to brown. As you shake off grease, place tongs inside of taco to spread it a bit. Drain on paper towels.
  • To complete the taco, add shredded cheese and a litle bit of hot sauce -- or come up with your own toppings. My husband likes for me to heat a can of chicken and mix with taco seasoning.

I love trying new recipes and experimenting with old ones. I enjoy entertaining large crowds, although I don't get to do it often. I am always looking for gourmet recipes that do not take a lot of time since I have an eight-month old son that keeps me occupied around the clock.
