Cabbage Beef Saute

"This is something I threw together from leftovers in the frig and a packet of onion soup mix. Really quick and really simple. Next time I might try adding mushrooms, but as it is it might make a really good soup base."

  • 1 small onion
  • 12 medium cabbage, shredded
  • 1 (1 1/4 ounce) package onion soup
  • 4 tablespoons butter
  • 2 lbs stew meat

directions

  • Saute cabbage and onion in butter until soft.
  • Add stew meat.
  • Simmer about 15 minutes or until meat is fully cooked, stirring occasionally.
  • Serve over hot buttered noodles! Yum!

I work full time raising 3 kids aging down from 7 to 5 months - 2 boys with a girl in the middle. My husband isn't home a lot at night during the week, but tries to come home for dinner on his lunch 1/2 hour, so I try to make something yummy each night that's quick with easy clean up because I like to spend a little while with my kids before bed rather than spend the night cleaning a dirty kitchen. I like to cook, but during the week I prefer fast and furious meals so the kids are in bed early to get rest for school.
