- 2⁄3 cup nopales, rinsed, dried and chopped
- 4 eggs, whisked
- 2 tablespoons salsa de chile fresco or 2 tablespoons salsa, of your choice
- 1⁄3 cup colby-monterey jack cheese, grated
- 2 flour tortillas
directions
- In large frying pan scramble Nopales, eggs, and Chile Fresco together. When eggs are set place in tortillas and top with cheese.

I chose this recipe because I remembered nopales from Mexico but had never tried cooking with them. They are a pretty neutral ingredient, so that the salsa and cheese really carry the flavor load. To me, the nopales added a "greeness" to the dish. I did like the texture. I did not care for the salsa mixed in with the eggs, and made these again with the salsa on top. I halved the recipe, but needed two tortillas, probably just a function of the size I had. I think I would probably like some green chiles or green onions mixed into the eggs with the nopales. Thanks for expanding my food experience!
