Caesar Salad Sandwiches With Chicken

- 6 medium hard rolls, preferably whole grain
- 3 cups romaine lettuce, torn
- 1⁄2 cup fat-free caesar salad dressing
- 1⁄3 cup grated parmesan cheese
- 1 1⁄2 lbs chicken breasts, cut into 3 inch long strips
- 2 teaspoons olive oil
directions
- Set the oven on broil.
- Cut each roll in half and scoop out the dough to form a pocket in one side of the bread.
- Combine the lettuce, dressing and cheese in a bowl.
- Place the chicken strips on a broiler pan and brush with the olive oil.
- Broil the strips of chicken for a total of about 7 minutes, turning once.
- Add the chicken to the salad and pile the mixture into the bread pocket.
- Top with the other half of bread and serve.

Yummy sandwich. To make things even easier I purchased the Perdue shortcuts Roasted Chicken pieces. Zapped them in the microwave for 30 seconds and mixed in with the romaine. I also subbed asiago cheese for the parmesan (thats what I had). Using the precooked chicken, I had these sandwiches on the table in less than 10 minutes. Now, you can't beat that!

These sandwiches were very yummy Annacia. My dh & I enjoyed them very much. I used the broiler method to cook the chicken. The dish was very quick and easy to make and sure was tasty. Next time I make these sandwiches, I will add a little salt and pepper to the chicken before I brush on the olive oil. I used my favourite Et Tu Caesar Dressing, shredded parmigano riggano and romaine lettuce hearts. For the bread I bought fresh scottish baps and crusty italian rolls, both breads tasted wonderful with the flavourful filling. Thanks for sharing.
