  • Blend cilantro, green chiles and onion together in food processor.
  • Bring water to a boil
  • add all ingredients.
  • simmer covered 30 minutes.

  1. The rice I make is a little different and maybe some of the other reviewers will like this better. Omit the onion, squeeze one lime into the ingredients you blend. Everything else is the same. I have made this several times and love, love, love this rice! I think it is best though when served with the cafe rio chicken and the cafe rio dressing. Not exactly the same but great all the same! Thank you for posting!
     
  2. It was OK, but not like the CAfe Rio rice..I think i would be better without the can of green chilis. They added a very odd flavor to the rice. I saw the same recipe online, too and thought "Yea!" Next time, I will use chicken stock (easier for me), nix the canned chilis and add some fresh ones along with a little lime juice..
     
  3. I made this with the intention of taking it to a party. If I could give it no stars I would. I tossed it. I followed the recipe exactly, it was disgusting! Thank goodness I prepared it early enough to make another dish.

I just turned 24 years old, and have been married for a little more than two years.
