Cafe Rio Tomatillo Salad Dressing (Copycat)

"A creamy slightly spicy tomatillo dressing. I have no idea if this is the the exact recipe, but it is real good! When I made it though, I halved the recipe and substituted a medium salsa verde for the tomatillos and jalapeno (used 1/2 cup for half of the recipe). So good!"

  • Dressing last 2 weeks in frig.

  3. This is a great copy cat of Cafe Rio's tomatillo's salad dressing. I know this. It has been almost two years since I was in their highest volume store in Salt Lake. Coming soon I can let the cat out of the bag. You know signed contracts and things. Cafe Rio thinks after many years of working there that I would forget the recipes
