Cajun Chicken Alfredo Pasta

"This dish can be made two ways: 1. The easy weeknight throw together way, 2. The good for company restaurant style way. I thought this way extremely spicy, my husband thought it was perfect so, spice to taste. Serve with salad and bread! I made the cream cheese a range, I prefer it with less but have added more to cut the spiciness when making it for both of us, so taste and add as desired."

  • Prepare noodles according to package directions and set aside.
  • Trim chicken breasts of fat and cut into bite sized pieces. (If doing restaurant style you may prefer to leave the breasts whole or cut into strips, up to you).
  • Saute chicken in butter. If you are doing restaurant style us only 1-2 tbsp of butter, reserving the rest.
  • Add cajun seasoning to chicken while it sautes, adding the ingredients to taste, you can always add more later.
  • For family style, once chicken is cooked, stir in half and half or cream and cheeses. Bring to a low boil and stir until melted and creamy. Toss with pasta and serve!
  • For restaurant style, melt remaining butter in a medium sauce pan, add half and half or cream. Melt in cheeses, stir to combine. Toss with pasta and place chicken on top.

  1. This is a truly yummy recipe. The only things I did differently was to deglaze with white wine before adding the cream, and then I added about 1/2 cup chopped scallions. WONDERFUL!
     
  2. Sooooooo very, very GOOD! We had this over cheese ravioli, only used 4 oz of cream cheese. We thought the spice was wonderful, as we love spicy food. I actually forgot the parmesan, and honestly we didn't miss it. I added mushrooms, red onion, and omitted the onion powder (personal preference). Thanks for posting. :)
     
  3. my brother-in-law first made this for me, and i loved it. now i make this often for my family, and we all love it, even my 4yo. i make as directed and it's always great. note of advice: stir the sauce a lot, don't leave it alone for too long or it's not as smooth. overall GREAT!

  5. This was very good! I love spicy food so it really hit the spot! The only change that I would make is to use a little less butter when sauteing the chicken -- I used the full amount and it made the sauce a little too greasy. It tasted very good though, and I will definitely make again!

Tweaks

  1. This was really good, but I thought the use of so many powdered spices gave the sauce something of a grainy texture. Next time I make it -- and I will definitely make it again -- I think I'm going to try halving the amounts of the spices and adding a splash (or several splashes!) of Louisiana hot sauce. Also, I made it family style and used farfalle instead of fettucine. I think the farfalle held the sauce better than fettucine would have.
