  • Whisk together first 5 ingredients; set aside.
  • Toss together lettuce, tomatoes and onion. Divide between 2 plates.
  • Liberally coat chicken breast with Cajun seasoning.
  • Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
  • Transfer cooked chicken to plate and cut into crosswise thin strips.
  • Arrange chicken atop salad.
  • Spoon dressing over and serve.

  4. Great dressing for the salad. I made this but used Cajun fish and turned out great. I was a bit concerned about that much Dijon but was wonderful.
     
  5. A delicious and quick meal. I followed the lead of JustJanS and made only half the dressing. A portion of the dressing was tossed with the salad and the remaining drizzled over the cooked chicken.

Tweaks

  1. Delicious! All three of us really enjoyed this recipe. The flavours were very tasty. We used baby leaf mesclun for the greens and I substituted the vegetable oil with olive oil spray but then kept to the recipe. Thank you gailanng for posting a yummy recipe.
