I love the Cajun Crab Spread they sell at Harris Teeter grocery store in North Carolina, but I can't get it here in Connecticut. I doubled the cajun seasonings (my own blend of salt, garlic powder, paprika, cayenne, and thyme) and omited the italian seasoning and it is spot on! Just like the Teeter's!

Using the "Krab" or imitation crab meat in whole lumps makes the dip almost impossible to dip up with any kind of chip or cracker. Mince the imitation crab in your kitchen chopper before adding into the recipe. Also, used a very finely shredded cheddar cheese for better blending. If you don't like all the salt use Cayenne pepper instead of "Cajun seasoning" but be careful! A little goes a long way.

Delicious Crab Dip. For those of you who thought it was too thick, add a few tablespoons of mayonnaise. I doubled the recipe and added at least 3 or 4 tablespoons and it was the perfect dip consistency. I omitted the cheddar cheese and the italian seasoning (not a fan) but otherwise followed the directions. It was such a hit. Thank you. Making again this weekend for a neighborhood get together. I may need to quadruple the recipe this time.

A friend of mine offered me some Harris Teeter Cajun Crab Dip and it was love at first bite. I left her house and went directly to Harris Teeter and purchased some, but I definitely plan to make the next batch myself. As joymorsel's review suggested, I'm going to omit the Italian seasoning add my own blend of "Salt Free" Cajun Seasoning (recipe from Genius Kitchen tweaked : omit the thyme & oregano, substitute chilli powder). However, I'm not going to double the amount of Cajun seasoning. Instead I'm going to add 1/2 tsp of Old Bay Seasoning to this recipe. I'm sure it's going to be absolutely delicious!

Well, the baby is a year old now and we have been in our new house for a year. I thought I would have a lot more accomplished but we are slowing getting things done. I love being a mother and I think we are adjusting well. Other than that we are pretty boring couple. We love to eat and try new recipes. I am still trying to get back into the swing of things and cook more. I am very proud that my daughter is willing to try almost any type of food and hasn't really spit anything out yet. She even eats asparagus, mushrooms and swordfish. I know, I know I am going to be in for a rude awakening. But I am enjoying it for now.
