Cajun Frizzled Kale With Vegetarian Sausage

"I made this recipe up one day when these were all the ingredients I had on hand. I use veggie sausage, but you an use real sausage if you want. It looks ugly, but tastes great. It goes well with homemade bread or cornbread."

  • Remove stems from kale and chop into thin strips.
  • Dice green onion.
  • Dice tomato.
  • Mix yogurt, salt and Cajun seasoning , if desired. Let sit 5 minutes or more.
  • Cook sausage according to package directions. When done, cut into 6 or so pieces.
  • Heat oil in a small frying pan on high temperature until hot. Throw kale in, tossing occasionally. Cook until it begins to darken. If the kale burns a little, that's OK.
  • Turn heat down. Add onion and tomatoes to kale. Cook until tomato pieces are warm.
  • Add yogurt mixture to pan and cook until warm. It may separate some or get runny. That's OK.
  • Add sausage to pan and stir well. Add lemon juice and stir.
  • Remove from heat and eat.

<p>I&nbsp;live in Seattle, but have also lived in the DC area, the Mid-west, California,&nbsp;the South, and New England,&nbsp;as&nbsp;well as China and India plus travel a fair bit, so I have experienced a good number of cuisines and like them all. I&nbsp;eat mostly vegetarian and mostly do a lot of scratch cooking. I am known for my creative use of leftovers and whatever is in the fridge. Too bad those recipes can't go easily into Zaar.</p>
