Directions

  1. Cook the rice with 3 c water and 1 tsp salt.
  2. Season the shrimp with pepper and Cajun seasoning.
  3. Heat oil in large skillet.
  4. Add onion and sauté until soft.
  5. Add garlic and sauté 30 seconds.
  6. Add shrimp and sauté until just barely done.
  7. Add lemon juice and parsley to pan. Mix well.
  8. Add shrimp mixture to rice and toss.
  9. Serve.
