  • Preheat oven to 400 degrees F.
  • In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.
  • Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel.
  • Peel potatoes and slice into french fry shapes.
  • Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier.
  • Place fries on lined baking sheet, trying not to let edges touch.
  • Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside.

  1. This was a great change from ordinary baked fries. I used 1 tsp of chicken broth instead of oil to make the paste and added a bit more hot sauce because we like the kick. My husband already is talking about next time! Thank you.
     
  2. We dun like diss, yes yeah!! These fries are marvelous Sue. The seasonings are right on!! I doubled the recipe--1 for my husband and 1 for me (he he!!) The kids were just out of luck. Went perfectly with our burger night. Thanks for posting this :D
     
  3. These were exiliant fries, very very tasty!! I didnt have cayenne or cumin, so i added 1/2 tsp. cajun spice......i also doubled the recipe since i was serving 5. It had a spicy kick to it, which tasted great! Thanks for the recipe, it'll be a keeper! (p.s. better than mcdonald's fries and better 4 u!!!)
     
  4. This is a potato dish that we eat about once a week or so, but I have always used a commercial Cajun spice mix. This mix of spices was much nicer than any I have bought here in Australia though. It was an easy recipe, and we had all the ingredients on hand.
     
  5. These fries are great!! I had all of the ingredients on hand and they were a snap to throw together. My extremely picky husband gave a big thumbs up. A yummy recipe that goes with burgers or steak and is good for you too! Thanks for posting.

Tweaks

  1. With all these fantastic reviews I guess you don't really need another one, but here it is anyways! These were 'tremendous' (quote BF). I mixed the paste directly in the bag so no cleaning up at all afterwards! I was surprised how nice and crispy they got even with the small amount of oil. I used parchment paper instead of aluminium foil so I didn't need to use any oil at all to bake them apart from the bit that's already in the paste! This is defenitely one to keep!
     
  2. These were nice but I couldnt taste the individual flavours of the herbs all I could taste was "hot". I didnt have garlic or onion powder so I just crushed up a few cloves of garlic instead. I mixed it all in the plastic bag to save on dishes. I served them with a generous amount of homemade aioli and they were good :) I will make these again...I just may play around with the seasonings first. Thanks for posting.
     
  3. I substituted chili oil for the vegetable oil for added kick. I also made 4 servings in ziploc bags and put them in the freezer so I can just pop them in the oven when we get a craving for these great fries. If you want to skip the peeling and slicing, you can also use those ready-cut freezer fries in the supermarket to make this recipe even easier.
     
  4. I made this exactly as directed except that I didn't peel the potatoes. Didn't have as strong a flavor as I was expecting, but I thought they tasted good. I also like that they were low in fat. DH didn't like them, but I would probably make them again for myself. This would be a nice way to prepare sweet potatoes or zucchini as well. If I make these again I would use olive oil instead of vegetable oil and add a little more salt. Thanks for sharing.
     
  5. Yay! I used three potatoes, and substituted italian seasoning for thyme, Sriracha for Tabasco, and 1/4 t red chili powder for the cayenne. Delicious! Roommate wants recipe.
