- 4 medium potatoes
- 1.23 ml oregano
- 1.23 ml thyme
- 4.92 ml paprika
- 0.61 ml cayenne (or to taste)
- 0.61 ml black pepper
- 1.23 ml sugar
- 1.23 ml cumin
- 2.46 ml salt
- 4.92 ml garlic powder
- 2.46 ml onion powder
- 1.23 ml Tabasco sauce
- 14.79 ml vegetable oil
directions
- Preheat oven to 400 degrees F.
- In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.
- Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel.
- Peel potatoes and slice into french fry shapes.
- Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier.
- Place fries on lined baking sheet, trying not to let edges touch.
- Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside.

These were exiliant fries, very very tasty!! I didnt have cayenne or cumin, so i added 1/2 tsp. cajun spice......i also doubled the recipe since i was serving 5. It had a spicy kick to it, which tasted great! Thanks for the recipe, it'll be a keeper! (p.s. better than mcdonald's fries and better 4 u!!!)

With all these fantastic reviews I guess you don't really need another one, but here it is anyways! These were 'tremendous' (quote BF). I mixed the paste directly in the bag so no cleaning up at all afterwards! I was surprised how nice and crispy they got even with the small amount of oil. I used parchment paper instead of aluminium foil so I didn't need to use any oil at all to bake them apart from the bit that's already in the paste! This is defenitely one to keep!

These were nice but I couldnt taste the individual flavours of the herbs all I could taste was "hot". I didnt have garlic or onion powder so I just crushed up a few cloves of garlic instead. I mixed it all in the plastic bag to save on dishes. I served them with a generous amount of homemade aioli and they were good :) I will make these again...I just may play around with the seasonings first. Thanks for posting.

I substituted chili oil for the vegetable oil for added kick. I also made 4 servings in ziploc bags and put them in the freezer so I can just pop them in the oven when we get a craving for these great fries. If you want to skip the peeling and slicing, you can also use those ready-cut freezer fries in the supermarket to make this recipe even easier.

I made this exactly as directed except that I didn't peel the potatoes. Didn't have as strong a flavor as I was expecting, but I thought they tasted good. I also like that they were low in fat. DH didn't like them, but I would probably make them again for myself. This would be a nice way to prepare sweet potatoes or zucchini as well. If I make these again I would use olive oil instead of vegetable oil and add a little more salt. Thanks for sharing.
