- 2 large sweet potatoes
- 2 tablespoons butter
- 1 1⁄2 cups sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon flour
- 2 eggs
- 2 (9 inch) graham cracker pie crust
- whipped cream
directions
- Peel and boil sweet potatoes until very tender.
- Preheat oven to 400°F.
- Mix all ingredients together and beat on high for 3 minutes.
- Fill each pie crust 3/4 of the way full. Bake for 40 minutes. Let cool so that it will thicken and become cuttable.
