Cake Mix Chocolate Mayonnaise Cake

"I like to get creative with boxed cake mixes. It's more convenient and less time consuming than making cakes from scratch. The mayonnaise in this cake makes it really moist. You cannot tell the mayonnaise is in it. Since mayonnaise is made with eggs and oil, there is no need to add oil to this recipe and it uses less eggs. Instead of the 3 large eggs the directions on the cake mix box calls for, this recipe calls for 2 large eggs."

  • Preheat oven to 350.
  • Grease and flour a bundt cake pan or a 9x13x2 inch cake pan.
  • Dump the cake mix into a large mixing bowl.
  • Add eggs, water and mayonnaise.
  • Mix by hand or with an electric mixer until well mixed.
  • Stir the chocolate chips into the cake batter using a large spoon.
  • Pour the cake batter into the cake pan and spread evenly.
  • Bake for 35 minutes or until cake is done.
  • Press the center of the cake in, using a finger.
  • If it springs back, the cake is done.
  • If not it needs more baking time.
  • If using a bundt cake pan, allow the cake to cool for 10 minutes and follow the next 3 steps.
  • Put a dinner plate or cake plate on top of the bundt cake pan. with the bottom of the plate facing you.
  • Holding the bundt cake pan onto the plate, turn it over(you may need to use hot pads to do this).
  • You may need to slightly shake the pan while it is on the plate to help loosen the cake from the pan.
  • If using a 9x13x2 inch cake pan, insert a toothpick into the center of the cake.
  • If the toothpick comes out clean, the cake is done.
  • If you are going to ice/frost the cake, allow the cake to completely cool.
  • If you don't want to frost/ice the cake you can dust it with powdered sugar.

  1. Very moist and delicious... I always add about 3T expresso powder to chocolate cake recipes, it makes the chocolate flavor deeper. **just a note, the first time I made this I buttered AND floured the pan and it stuck, the next time I buttered only and it came out fine.....
     
  2. Made as written with Pilllsbury Devils food cake mix. Dukes light mayonnaise and I used Ghiradelli bittersweet chocolate chips. Amazing cake that is very simple to make!
     
  3. The cake turned out gummy and somewhat dense. I think there are too many eggs in it. Most mayo cakes don't call for eggs since mayo already contains eggs.
     
  4. Made this for my friend. She loves rich chocolate cakes and eats in nice restaurants a lot. She said that it is the BEST cake she has had and that I should sell it in restaurants.
     
  5. This has been a, "never fails," recipe for me :-) I always ice this cake with home made butter cream icing and family and friends love it! :-)

I just love to cook. I love to experiment with different recipes and love to get new ones. I love to share my recipes and love to have others taste things I make. I baked a lot while I was living at home...in high school. I have babysat for over 33 years for different people I have cooked meals for them when it was needed. At one time, I babysat 2 children in my apartment and cooked dinner for them, their mom and their grandmother. I loved it. I took care of them for a couple of years. The name AuntWoofieWoof has a very special meaning. I babysat for a family with 3 children in their home several years ago. One day the youngest boy came up to me and said "Aunt Woofie Woof......." and proceeded to say what he had to say. He called me that name for 2 days. When I asked him where he got the name from, his reply was "It was on a Dr Suess tape my momma got me at the Library". :lol: I thought it was so cute that I decided to use it on the internet. I babysat for that family for 8 years!! That little boy is now in middle school. I still see him and his family every now and then. His mom and I keep in touch over the phone. I usually spend Thanksgiving Day with them. It is fun watching the kids grow into fine young adults. The oldest daughter, is in her early 20's, is working and has her own place. She is a beautiful young lady. I am a Substitute Playground Supervisor and a Crossing Guard at an Elementary School.
