Cake Mix Extender I

"This recipe is posted in many places on the internet. I used it with a boxed red velvet cake mix and it worked out great. It added volume to the cake mix but not so much that the pans overflowed."

  • Add all ingredients to your cake mix ingredients and prepare as indicated on the box. Cakes may need a few extra minutes of baking time because there is more batter than the original cake mix.

Questions & Replies

  1. I read somewhere you could just compensate by adding a half or 1/4 box of the same mix. It seems by adding more oil flour egg etc that you are changing much more of the flavor of the original mix as baking is a science...Just saying as most box recipes call for the exact amount if each of those things on the box yet not handed down old recipes. Makes one just want to do scratch recipes cake manufacturers! Too much fussing around instead if buying a box to make it easier .But then the bean counters did this to everything too. Cereal,premade salads etc. I also wonder since there was a craze to do pudding in the mix if it's just already in every mix now so you really font need to add a bix of instant pudding? 1 add more cake mix 2 Is pudding in every box mix now so you dont need to add it?
     
  2. Should we not add an extra egg also?
     
  3. Do you add this along with the other thats on the box?

  1. Nice recipe! I get so irritated with cake mixes these days because they turn out one inch high. This recipe fixes that and gives a nice high cake, like it should be. I did add a pinch of salt and some vanilla (white cake mix). Cake turned out perfect in a 13" x 9" pan.
