Calabacitas con Leche (Squash with milk)

directions

  • Saute squash in butter until tender.
  • Reduce heat and add corn, onions, salt, pepper, and green chilies.
  • Mix well and add milk.
  • Simmer until well blended.
  • Pour into a 1-quart casserole dish.
  • Top with cheese.
  • Cover and bake at 400F for 20 minutes.

  1. This is so good whether you make it with yellow squash or zuccini. Was wonderful with red snapper, sliced tomatoes, and garlic toast. Great recipe!
     
  2. Wow, I can't believe I'm the first to review this recipe. It's delicious! The combination of squash sauteed in butter with the crunchy corn, and spicy peppers was great, and there was just enough cheese/milk to make it creamy at the same time. I didn't change a thing - it's perfect. I'll definitely make this again.
     
  3. This was an excellent side dish! My DH and I really enjoyed the combination of ingredients. I sauteed my squash in olive oil and instead of using milk, I substituted a can of Cream of Asparagus Soup and thinned the soup just slightly with 1/2 cup (+) of coffee cream (half & half). I baked it in the oven according to instructions and avoided adding extra cheese. The soup and cream made it rich enough. I have just a little left over for dinner tonight. Thanks, Kim D, for sharing this very nice side dish recipe!
     
  4. Wow! My husband and I both loved this dish. It was hard to stop eating this. The gentle flavors blend beautifully. I was concerned that the 1/2 cup of cheese wouldn't be enough, but we used extra sharp cheddar,and it was perfect. I'm dieting, so next time I'll try using less butter. In the interest of full disclosure, we had a time crunch so I skipped baking it, just sprinkled on the cheese and served it. This is a winner and a new favorite that we will be enjoying regularly. Thanks for sharing it!
     
  5. I love calabacitas, but have never made it before tonight. This was very very good. I made a couple changes: only 3 tbs butter, I used frozen corn (it's what I had on hand), I put extra cheese in the vegetable mixture while it was still on the burner (because I LOVE CHEESE) and since my DH doesn't like squash I used zucchini (I have had calabacitas many times with zucchini.) All and all my changes didn't do much to change the recipe except make it cheesier. I just loved this recipe it's so easy, and a great side dish. Will be making this one again. Thanks for sharing!!
