  • Brown beef and saute onions in bacon grease.
  • Add diced tomatoes, chile strips, both beef and chicken broths, and all seasonings to beef and onions mixture.
  • Simmer over low heat until meat is tender.
  • Add cubed potatoes during the last 30 minutes of cooking.
  • This freezes well before the potatoes are added.
  • This mexican stew can be served with warm dinner rolls, flour tortillas, or even cornbread.
  • It makes one gallon of stew.

  1. This is a fantastic recipe - Thank you! My husband is from El Paso and his father helped establish the first little league in El Paso so I knew I had to try this recipe. I did make a few changes; 1 1/2 pds cubed sirloin roast as I thought 3 lbs was too much meat; I only used 2 TLBS bacon grease and that was plenty; 1 cup chicken stock instead of 1/2 cup; 1 tsp pepper. This is one of my new favorite recipes and my husband really likes it too. Thanks again!
     
  2. ABSOLUTELY NOT GOOD AT ALL. Wow.....a fantastically OLD,OLD Old Traditional food staple that many past generation of spanish people including my family can trace back to New Mexico before it (or even Texas for that matter) had even become states. There are several things wrong with this recipe and for those people whom have never tried an authentically 'REAL' Caldillo...this recipe is sure to disappoint. So many things wrong here that this borderlines on insulting. Let me mention just a few things here. (A little 'spanish' education, if you will). 'Chile' is not spelled 'Chili' as you did in Chili Peppers! It should be spelled with an "e" at the end. its only spelled with an 'i' at the end of the word when: 1) it's converting to a spanish word and 2) when you're adding the Chile Pepper to another ingredient. such as: Chili con Carne or Chili con Queso. Then change the 'e' to an 'i'. Otherwise it's: Chil'e' Peppers. Secondly, since Caldillo dates way back even before we were Mexico here in the Southwest, we've always use the proper spice names! Such as, Cumin....its called Comino. (read the spice container) Lastly, in this recipe, the ingredients call for 2 teaspoons of Salt then two lines down: it then calls for 2 teaspoons of Garlic Salt, also. WOW! thats double salt. NEVER....NEVER...NEVER, use Garlic salt as a Spice in any recipe. Reason is, if you ever want to add extra of either one.... you can't, because you'll either add too much of one or too little of the other. My advice: Stay away from spices that are combined, they don't save time, or save money or make it taste any better. In conclusion, after making this recipe, and trying it out on a large group including family and friends, well lets just say It's the one dish that was not eaten much nor did anyone way want to take some home. Notice also that although this recipe is getting some good reviews, everyone has has to make several changes to it. Not to change the flavor but to add the flavor. this is not tlgood...stay clear.
     
  3. I have been making this for years and my family loves it! I don't follow the recipe exactly and add spices to taste since everyone is different. I have also substituted venison for beef when I have it and it is delicious.
     
  4. Great recipe! Lots of flavor! I ended up substituting two cups of the canned diced tomatoes for 1 can of the Rotel diced tomatoes with habaneros. I like it HOT!! Will definitely make this recipe again!
     
  5. I'm from El Paso, TX also and this is a great basic Caldillo recipe. Since my family loves vegetables, we also add some Mexican squash, zucchini, and/or corn. It's a great one pot meal!
