  • Heat up the tortillas so that they are firm enough to hold all of the above ingredients. Throwing them in the skillet for about 6 minutes should do the trick.
  • Take about a quarter cup of cheddar and place it down the center of the tortilla.
  • Add about 3 oz of kidney beans.
  • Add a quarter of the chopped tomato.
  • Add lettuce.
  • Add a quarter sliced avocado.
  • Pour as much ranch dressing as desired.
  • Enjoy your salad in a tortilla!

  1. I was craving these today and it's been so long since I made them that I needed a refresher - I am so happy I found your recipe. I have a slight modification that I use (and I'm pretty sure I didn't come up with it - I think this was how they were in my Islands... o lo so many years ago. Seriously, I ate this on Pico in Westwood in the 80's!) chopped fresh mushrooms (after the beans - or where ever you like) and beansprouts instead of the romaine. it makes it really nice and crunchy. OH! I can hardly wait. Thanks for the memory booster!
     
  2. Thank you, thank you! This was my favorite thing to order at Island's before they all closed down in the Phoenix area. I actually purchased kidney beans tonight so that I could make them as I was craving them. I searched for copycat recipe to make sure I remembered all the ingredients as found yours. Looks like I need to get ranch dressing and avocado. Thanks so much for the recipe!
