"this is my take on a cheesy zucchini bake that my grandma use to make, granted its not exact but its pretty close given my diet restrictions"

ingredients

4 veggie burgers (garden veggie burgers are best)
3 cups zucchini, sliced
¹⁄₂ cup onion, chopped
1 tablespoon canola oil
¹⁄₂ teaspoon salt
¹⁄₂ teaspoon garlic powder
1 teaspoon chili powder
1 (4 1/2 ounce) can green chilies, chopped
2 cups cooked rice
¹⁄₂ cup tofutti sour cream (or any tofu sour cream)
1 cup monterey jack-style soy cheese, divided
1 large tomatoes, thinly sliced
¹⁄₂ cup parmesan soy cheese, flavored

directions

Cook rice according to package directions (for a better taste don't use instant or minute rice).
In a large frying pan saute veggie burgers, zucchini, and onions in canola oil.
Remove from heat and stir in salt, garlic powder, chili powder, chilies, rice, tofutti sour cream, and 1/2 cup of the Monterey Jack soy cheese.
Place in shallow 2 1/2-quart casserole dish coated with vegetable cooking spray.
Top with tomato slices and sprinkle with remaining soy cheese.
Bake at 375° F for 20 minutes uncovered or until hot in the center. Serve immediately.

My name is Meg and I am 21 years old and much like my mom, Karen (kzbhansen), I love to cook... I guess you could say that it is something that I was born to do growing up with my mom's cooking. Other than that I love music... Mainly heavy metal and rock, I do enjoy some punk bands like The Casualties, The Vandals, The Misfits, The Clash, the Ramones and Rancid. Some of my favorite metal bands are Walls of Jericho, In This Moment, Lamb of God, Amon Amarth, Opeth, Arch Enemy, and Iced Earth just to name a few. and my favorite band doesnt fall in either of those catagories, because they're not really a band, its one guy who plays everything you hear on the cd and he hires people to play with him when he goes on tour, this band is none other than Nine Inch Nails. Love them! They're an industrial rock band, so if you like that kind of stuff, check them out (even though they've been around for years) I spend a lot of my time at home with my bunny or watching movies, thats all I spend any extra money i may have on, is cds and movies. I am totally in love with the Twilight book series, I first got into it when I was a junior in high school and have found that each book is better than the one before... if you havent read them i suggest you run out to your nearest book store and purchase them, you wont be dissappointed
