  1. Sauté beef, zucchini, onions and seasonings in lightly greased (sprayed) skillet until meat is no longer pink and veggies are tender-crisp, stirring frequently. Add green chilies, rice, sour cream and 1 cup cheese.
  2. Turn into a shallow 2 quart casserole (9x13). Arrange tomato slices on top. Season with salt and pepper. Top with remaining cheese.
  3. Bake 350°F for 20-25 minutes.
