Directions

  1. Preheat oven to 350 degrees.
  2. Cook pasta according to package directions without added fat or salt.
  3. In a large skillet sprayed with nonstick cooking spray sauté chicken, onion, garlic, green pepper for 10-15 minutes.
  4. Add zucchini, tomatoes, tomato paste and red pepper.
  5. Cover and simmer 10-15 minutes, stirring frequently.
  6. In a prepared 9-x 13-inch baking dish layer pasta, ricotta cheese, Canadian bacon and sauce.
  7. Sprinkle with mozzarella and Parmesan cheese.
  8. Bake uncovered 15-20 minutes or until cheese is melted and dish is warmed throughout.
