Candied Orange Walnuts

"An easy recipe that can be used for ice cream topping, gift giving at Christmas or just simply on a cookie platter. Great on a salad with dried cranberries and feta cheese."

  • 2 cups sugar
  • 12 cup fresh orange juice
  • 1 teaspoon orange extract
  • 4 cups walnuts

directions

  • Bring sugar and orange juice to a rolling boil.
  • Boil one minute.
  • Add extract and walnuts.
  • Stir well until evenly coated
  • Pour walnuts onto wax paper.
  • Let sit until dried.
  • Store in airtight container.

  2. These were terrific. I'd recently read that walnuts are one of the few plants loaded with Omega-3s, so I decided to start throwing 'em into salads. I was making a spinach salad with an orange vinaigrette, and thought this would be the perfect finishing touch -- and it was! The orange flavor was distinct, but not overwhelming; the sweetness was a lovely side note, but it wasn't like eating candy. I tweaked the recipe slightly by cutting back on the sugar (just a tablespoon or two), and by adding orange zest along with the orange juice. I'll make these again and again. Thanks so much for posting this!

My name is Joanne and I have been married for 49 years to my high school sweetheart, Roman. We live in Louisville, Oh just east of Canton which is home of the Pro Football Hall of Fame. We have two grown sons, one recently divorced and the younger son is getting married for the first time in Sept. 07. We have no granchildren which is very disappointing but there is still hope. I found this site in Dec. O5 and I am addicted. I recently took part in the cookbook swap which was fun and now am signed up for Pick A Chef. I love to cook and enjoy serving as hospitality chairman at our church. I plan and prepare all luncheons, banquets, wedding receptions, etc. Many women and men assist me with these affairs. I also love traveling, gardening and visiting the elderly. I enjoy browsing through my collection of Jr. League cookbooks and watching the Food network. Before Christmas each year I bake about 25 varieties of cookies and deliver them to the elderly. A most rewarding experience.
