Candied Yams

"For years my mom made canned yams and baked them with marshmallows on top. This was my first experience with fresh yams and I became a convert (no more canned for me!!!) It of course is a great side dish to turkey on Thanksgiving."

  • 3 yams (peeled and thinly sliced)
  • 14 cup margarine
  • 34 - 1 12 cup sugar (depending on how sweet you want it)
  • 12 teaspoon salt
  • 1 teaspoon vanilla
  • 14 cup water
  • 1 lemon, juice of (approx. 1 Tablespoon)
  • 1 teaspoon nutmeg

directions

  • Melt 1/2 of the margarine in a large pan.
  • Add the yams, sugar, salt, vanilla and water.
  • Cover and simmer 20 minutes or until tender.
  • Stir in the rest of the margarine, nutmeg and lemon juice.
  • Cook 10 minutes without the lid.

  1. This was good since I was in a hurry to make a yam dish for Christmas today. I left out the lemon as well (since it didn't seem to be popular in other reviews) and did 1 c of brown sugar. This is a bit juicy/saucy for me, the way it came out. But the flavor was good. Next time I think I'll put in only 1/2 tsp of nutmeg. I also added 1 tsp of cinnamon, but I'd probably only do 1/2 tsp of that next time as well. I threw marshmallows on top as well. Overall it was a hit, so I'll probably use it again since it's quick! Thanks for sharing.
     
  2. Quote from my husband, best yams he ever had. Instead of thin slices he wanted chunks so thats what we did and instead of white sugar we did light brown sugar. Added 1 tsp of cinnamon with the nutmeg and then put the yams in a 13" X 9" glass dish and poured red hot cinnamon candy and marshmellows on the top, baked at 350 for 20 minutes till candy melted & marshmellows browned. This is a definite for the holidays from now on. Thanks so much Kellie
     
  3. This was awesome! I made it tonight and the only changes I had were I used brown sugar instead of white and left out the vanilla, lemon juice and nutmeg. Once the yams were cooked I mashed them in the pot and then added the rest of the margarine. So good! Thanks for sharing this great recipe!
     
  4. I made this last year and loved it (husband and son also)! i can't remember if i added the lemon juice or not, but at the end i DID throw some marshmellows on top. I love my moms recipe but it can be time consuming- thats why i like this one- VERY easy to make and not so time consuming! this is a keeper, and i will be making it again this year with thanksgiving dinner!

I live on the beautiful Central Coast of California. I am a 46 year old single mom and student (I got my AA degree in business management May 05). I used to love to cook and try new recipes that is until my kids got to the point of...YUCK! I'm not eating that! Followed closely by the "______ the Beautiful" series, of which California the Beautiful (of course) is tops on that list.
