  • Dissolve the sugar and water together over a low heat. Bring to the boil and simmer for 3 minutes. Leave to cool.
  • Cut the melon in half, scoop out the seeds and remove the rind.
  • Place the flesh, lemon juice and sugar syrup in a food processor and process for one minute or until smooth.
  • Either place in a container and put in the freezer for 3 hours stirring occasionally to break up the ice crystals or freeze in an ice cream machine.

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
