"A simple chicken salad served in a cantaloupe half. I haven't tried this yet, but hope to very soon."

  • In a large bowl, combine chicken, blueberries, celery, grapes and almonds.
  • In a small bowl, mix dressing ingredients.
  • Pour over the chicken mixture and toss gently.
  • Spoon into cantaloupe halves.
  • Nutritional Information: One serving (prepared with sugar substitute, light mayonnaise and sour cream and without added salt) equals: 285 calories, 87 mg sodium, 36 mg cholesterol, 37 gm carbohydrate, 18 gm protein, 9 gm fat.

  1. I really enjoyed this meal. it was light and refreshing. I used low fat mayonnaise and sour cream. I also minced the celery. I like my cantaloupe really ripe and juicy so the only thing I would change for next time is I'd cut the cantaloupe in small pieces and just add it to the mix and eat it our of a regular bowl. The problem was as I cut into the cantaloupe the mix just became a bit watery.
     
  2. This was GREAT! I used non-fat mayo and non-fat sour cream. I did not have any grapes. I added a bit of tarragon to the dressing as well. Don't skip the almonds!
