Directions

  1. Bring water to a boil in a medium saucepan and add salt.
  2. Gradually whisk in couscous, cover and remove from heat.
  3. Let stand for 5-10 minutes, until all the water is absorbed.
  4. Fluff with fork and transfer to a large bowl.
  5. Combine all the rest of the couscous ingredients and mix.
  6. ---Dressing---.
  7. Combine lemon juice, chili powder, ground cumin, garlic, sugar and salt in a small bowl.
  8. Whisk until the sugar and salt are dissolved.
  9. Gradually whisk in the oil.
  10. Pour dressing over couscous and mix.
  11. Taste and adjust seasoning if desired.
  12. Cover and chill in the refrigerator for 2-4 hours.
