  • Bake potatoes until done.
  • Cut in half lengthwise.
  • Scoop potato out of skin.
  • Mash potato with margarine, sour cream and milk.
  • Stir in crab meat.
  • Put mixture back into skins.
  • Sprinkle with cheese and parsley.
  • Broil until browned.

  1. These potatoes were easy to make and tasted absolutely delicious!! I baked them in the microwave (just till they were a little soft). We added bacon bits on half of them and it tasted great. My kids even ate them and begged for more. I will definitely make these again...thanks for sharing this great recipe!
     
  2. Made for PAC, Spring 2007 ~ Had unexpected guests the other night, so I used LARGE potatoes & added an extra can of crabmeat, stretching this to almost 10 servings! These were very tasty & a nice change from the more usual twice-baked potatoes!

I live in Canada & am a stay at home mother of 3. I am not much of a cook, learning slowly, thanks to all of your great recipes.I'd like to experiment a bit more but usually end up making kid friendly recipes. Baking is probably my favorite thing to do.
