Caramel Apple Salad

"This recipe was shared by one of my fellow Weight Watchers. I'm not much of a person for sweets, but this was REALLY good in my book! 1 Cup equals 5 points."

  1. Really enjoyed this recipe, although I did make some changes. I don't do cool whip since it is made from hydrogenated oil, so followed anothers tip and used 1 cup vanilla yogurt. Did drain the pineapple juice into a bowl and put apple chunks in to prevent oxidation, but did not add to salad. Also i sprinkled the pudding on yogurt and used regular as I don't use artifical sugar. And I HIGHLY recommend adding chopped walnuts, they really added to the recipe. Pecans would also be good.
     
  2. We all loved this, the only negative comment I have is that I could sit down and eat the entire bowl! It isn't really a pretty desert but I had a dinner party and put it in a plastic wine glass and topped it with a little sprinkle of graham cracker crumbs. Everyone cleaned their glasses!
     
  3. Wonderful recipe Claudia Dawn!<br/>Love the combination of flavors. used SF cool whip and SF butterscotch pudding mix, Gala and Fuji apples. I did peel the apples and drained the pineapple, dipped the cut & peeled apples into the pineapple juice to prevent browning.<br/>Winning recipe that will be made often in the summer months here.<br/>Thank you!
     
  4. Wonderful! Even my husband like it and he doesn't usually go for things with much apple in it. I did drain the pineapple then used only a half cup of the juice to keep it from getting too soupy. Thanks you for passing this recipe on. :)
     
  5. My husband really liked it; said it was one of the better things I have made (and I have tried quite a few recipes on here) I liked it too, but not quite as much. It does need a crunch I feel like...I sprinkled some pecans on my serving.

<p>I live in Northern Indiana with my husband of 37 years and best friend, Evan. Due to unfortunate circumstances and God's grace, we are raising our two beautiful grandchildren from our daughter, Chris, who lost her battle with breast cancer after a hard, four year battle. It is a responsibility that I do not take lightly. God has blessed us with these kids and it is an honor to be able to raise them. That's not to say, it's easy. Organization is the key. We do lots of meal planning and advance preparation. <br /><br />Evan &amp; I enjoy eating out at fine restaurants and then trying to re-create gourmet meals at home. Unfortunately (?) we are such good cooks that we are usually disappointed when eating out because we know that what we prepare tastes better (and less expensive). Therefore, we usually only order something that we haven't made at home. <br /><br />We love to cook together and spend many hours cooking for family and friends. Quite honestly, Evan is the better cook in the family. He has a knack for knowing what flavors and spices blend well together and has created many original creations. <br /><br />I love to find and try out new recipes - which is why I visit Recipezaar often. We've added many of your shared recipes to my public cookbook titled Permanent Edition. I only post recipes that are our favorites and feel that others will enjoy them. I look for ease of preparation AND outstanding flavor. If I post a recipe that's a little more work, it's because the end result deserves the extra effort. <br /><br />If we had a month off with no work, no responsibilities, and no financial issues; we'd spent time on the ocean in Oregon. My husband grew up in Seattle and spent summers at Cannon Beach (Oregon).
