Directions

  1. Peel the bananas and cut in half lengthways.
  2. Heat 2/3rds of the butter in a large non stick frying pan.
  3. When foaming, add the banana halves.
  4. Cook over medium heat for about 2 minutes each side.
  5. Transfer to a plate and keep warm.
  6. Add the remaining butter to the pan with the sugar, syrup and sour cream.
  7. Whisk over low heat until until the sugar dissolves.
  8. Simmer 1 minute.
  9. Whisk in cream and simmer for a further minute.
  10. Return bananas to the pan and simmer gently for 2-3 minutes.
  11. Serve immediately with vanilla ice cream and a dollop of whipped cream.
