Caramel Popcorn

"I love to try different caramel corn recipes. This one did not disappoint. I skipped the salt (to me the popcorn is already salty enough unless I make homemade popcorn--I frequently use leftover movie or microwave popcorn). I didn't have any corn syrup at the last minute, but I substituted avave nectar which worked just fine. Recipe courtesy of www.dinnerthendessert.com."

  • Place the popped popcorn into 2 large baking pans.
  • Preheat oven to 200.
  • Combine the brown sugar, corn syrup, butter, and salt in a saucepan.
  • Bring to a boil over medium heat, stirring enough to blend.
  • Once the mixture begins to boil, boil for 3 to 4 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla.
  • The mixture will bubble rapidly.
  • Immediately pour over the popcorn in the pans, and stir to coat.
  • It is ok if the popcorn isn't completely coated yet because the oven will help us out.
  • Bake for 45 minutes, but stir popcorn every 15 minutes.
  • When it comes out of the oven, try to separate the pieces as much as you can before it cools completely.
