  • Pour sugar into small heavy skillet and moisten evenly with 2 Tablespoons water.
  • Place over medium heat until mixture turns golden, tipping and swirling occasionally to insure even browning.
  • Gradually add the remaining 1/4 cup water and then the garlic cloves.
  • Continue cooking for 2 more minutes.
  • Swirl in the butter and then the brandy.
  • Allow to cool while you scoop the ice cream.
  • Serve warm over ice cream.
