Caramelized Garlic

- 1⁄2 cup sugar
- 6 tablespoons water
- 1⁄2 cup peeled garlic clove
- 2 tablespoons unsalted butter
- 1 tablespoon brandy
directions
- Pour sugar into small heavy skillet and moisten evenly with 2 Tablespoons water.
- Place over medium heat until mixture turns golden, tipping and swirling occasionally to insure even browning.
- Gradually add the remaining 1/4 cup water and then the garlic cloves.
- Continue cooking for 2 more minutes.
- Swirl in the butter and then the brandy.
- Allow to cool while you scoop the ice cream.
- Serve warm over ice cream.
