Carbonara Chicken Risotto

  • Cook rice according to package directions.
  • Cook bacon in a large skillet until crisp, remove with a slotted spoon and drain on paper towels.
  • Season chicken with salt and pepper, brown on all sides in 2 tbls of the bacon drippings.
  • Add garlic and cream, simmer until cream begins to thicken.
  • Add peas and simmer until peas are heated through.
  • Reduce heat to low, add 3/4 of the cheese, stir until melted, add the remaining cheese if needed to thicken the sauce.
  • Serve over risotto, top with bacon and extra cheese if desired.

  1. MMMM mmmm good! When I sat down and put the first bite of this in my mouth, I was shocked and amazed that something so good had actually been made in my kitchen! The only subtitutions I made were to use brown rice, and mushrooms instead of peas. thumbs up!
     
  2. UB HR rice not available, so pkg. size would be helpful. 10 oz. bacon a bit overwhelming, suggest 8 oz. Sauce is wonderful so would increase cream & garlic 50%. Parm cheese (grated)in tablespoons would also be helpful.
     
  3. Awesome recipe, but I HATE (hate) peas so I substitute in broccoli, carrots, cauliflower, spinach, mushrooms and baby corn (whatever is available really). I also cook the rice is chicken broth, which is one bouillon cube per cup of rice.
     
  4. I made this for dinner last night and it was very easy to make and tasted great! I used about 2 1/2 oz. of Parmesan, and added most of the cooked bacon bits in the sauce and used the remaining bacon to garnish the top. It's a pretty dish as well as tastey. I will definately be making this again.
