  • Preheat the oven to 350F (175C). Spray a 9-inch square cake pan and dust with additional cocoa powder and set aside.
  • In a large bowl, combine the flours, sugar, cocoa, baking powder, baking soda and salt, set aside. In another bowl combine the prunes, egg whites, vanilla and coffee. Mix the wet ingredients into the dry ingredients. Pour into the prepared cake pan. Bake for 20 to 25 minutes or until a toothpick inserted in the middle of the cake comes out clean.

  1. Oh my, this really is delicious! I used 2/3 cup cake flour and 1/4 cup whole wheat flour, 1 cup soft demerara sugar, and 1 whole egg plus one egg white. Overbaked slightly by accident, but the middle bits give me an idea of what the texture would be like had I been paying attention!! Excellent recipe, thank you for sharing!
     
  2. Very, very good with very few calories - AMAZING! I couldn't really taste the coffee too much, but I love the trick of adding coffee to chocolate things - creates a rich flavor with less calories and no fat. Next time I might go to the coffee stand next door and buy a few shots of espresso to throw in instead of coffee. I had a great time making a powdered sugar stencil, using waxed paper and an exacto knife. My cake was a work of art!!! The only thing I would suggest is do the powdered sugar right before you serve it. I did one layer too early and it soaked into the cake. I did another layer over top and it looked great.   3. A friend of mine lost his job and my boyfriend calls me up and asks, "will you bake him a cake?" and of course I did! I couldn't decide what kind so just basic Cake search and this looked great. Didn't know it had only 70 calories and the guy loved it! I added some orange juice soaked dried cranberries and milk chocolate chips on top. Thanks! :D
     
  4. This cake was lovely, though it had a dark-chocolate, bitter-sweet taste which is not always my favourite. I made it as a birthday cake for my mom and served it with salted caramel frosting. I had been looking for a not-to-sweet cake to try that icing on and it was a delicious combination. My parents really enjoyed it too.

Instead of the whole wheat pastry flour I used the mixture of cake flour and AP flour (see substitution formula at http://www.joyofbaking.com/IngredientSubstitution.html) so the cake had zero wheat flavor. The texture was light and moist but I think the flavor lacked something. I used 3/4 cup coffee + 1/4 cup Kahlua which resulted in a rather strong alcoholic taste right out of the oven but it mellowed down nicely the next day.

  2. This was an excellent cake! I ended up using about 1/3 cup melted butter instead of the applesauce as I didn't have any and then covered it with a cocoa mocha frosting. The result was a delicious balance of chocolate and coffee. Thanks for sharing this recipe!
     
  3. This is wonderful, for being low fat. I made this healthier by using Splenda for half the sugar. I used rum extract instead of vanilla. Cake has a nice fudge-like texture, very moist! I used a variation on Marra's recipe #257573 as a glaze, and also baked in a 9-inch round pan. We will be making this often!

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
