Caribbean Coconut Chicken

"This dish is a little spicy, a little sweet and very delicious. I like to garnish it with some flaked coconut and chopped peanuts. Rice is the perfect side dish to enjoy with the coconut sauce."

  • Stir together first 8 ingredients in a shallow bowl; reserve 2 Tablespoons mixture.
  • Dredge chicken breasts in remaining mixture.
  • Melt butter in a lare skillet over medium-high heat; add chicken, and cook 2 minutes on each side.
  • Stir in reserved onion mixture, cream of coconut and soy sauce.
  • Cover and reduce heat; simmer 20 minutes or until chicken is done.
  • I like to garnish this dish with a few sprinkles of flaked coconut and chopped peanuts.

  1. My family didn't particularly care for this dish, but I have to think it's because we are low sodium eaters, and crave ALOT of spice to compensate for flavor. I'm still going to try it again, jazzing it up with the things we are used to. Thank you for sharing!

  3. This was delicious and is very adaptable to changes in spices, etc. Was a bit hit with my family last night and is now an addition to our menu.

  5. geema, my family loved this! i used ground almonds instead of peanuts and boneless skinless breasts. i did have to double the spices to coat both sides. very enjoyable dinner served over basmati rice to use up all the lovely sauce. i garnished with coconut and toasted slivered almonds.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
