  • 4 boneless skinless chicken breasts (about 1 lb.)
  • 1 cup Caribbean jerk marinade, plus
  • 2 tablespoons Caribbean jerk marinade (divided)
  • 1 can tropical fruit salad, drained

Directions

  1. Place trimmed chicken and 3/4 cup marinade in a resealable plastic bag.
  2. Marinate in the refrigerator at least 30 minutes or up to 3 hours.
  3. Grill or broil chicken until thoroughly cooked and no longer pink, about 5 to 7 minutes per side, brushing with marinade.
  4. Meanwhile, combine remaining 2T marinade and tropical fruit salad, serve over cooked chicken.
  5. Serve with cooked rice.
