  1. chop onion, scallions, and canned fruit.
  2. saute onion in olive oil in a sauce pan until translucent.
  3. add coconut and saute until slightly golden.
  4. pour in chicken stock and bring to a boil.
  5. add rice and cook for 1-2 minutes.
  6. add fruit and fold into the rice.
  7. turn off heat, cover, and allow to set for 5 minutes.
  8. top with chopped scallions.
